Sweet potatoes in wafflez is almost as surprising as zuchini in chocolat cake

Combine that with the orange zest, and it's amazing. Since I have some sweet potatoes and oranges handy, I may just have to make some more soon.

Things to look for in a waffle iron:
-Round Shape (Cooks more evenly than square irons).
-Metal frame (Can get hotter than the plastic ones, which is good for crispy waffles).
-Temperature gage (You want full control over your waffles. Use higher temperature to eat now, and a slightly lower one for freezer waffles).
-Single purpose (It should only be designed to cook waffles, and cook only one at a time).

-If going for belgian style, make sure the grid things are very angular and pointy. Rounded grid things don't cook as well.

Oh, waffle irons are also very good for cooking bacon (and probably breakfast sausage). They produce nice, crisp strips of bacon, and allow grease to drip off.
