I've downloaded DSL 2.1 and been using it to AI some bots I made myself. But while in AI folders I noticed there are 6 robot folders and bindings per team , not 3. How do I unlock these bots?

You have the old version of selectbot_computer.gib.
Download this https://dl.dropboxusercontent.com/u/13002164/selectbot_computer.gib (Right click > Save Link As) then go to your exhibition folder in the UI folder and paste this version over the old one.

I'm going to suspect it's because you didn't install the UI folder right when you installed DSL 2.1

Just download this full version and move your bots over to it.
